Dueling drumsticks: Pan-fried vs. deep-fried
Atlanta — At the Southern Skillet, a meat-and-two mainstay in Roswell, Ga., there?s a fine collection of skillets hanging on the wall and a big one dangling from the ceiling like a cast-iron mobile. None figure in one of the restaurant?s specialties, fried chicken. ?We use a deep-fryer,? says manager Charles Paris. ?You couldn?t fry enough chicken in a skillet for our lunch crowd.? .
Woodlands chef to compete in Iron Chef America
Kent Rathbun, executive chef and owner of Jasper's in The Woodlands, has been chosen to compete in the Food Network's Iron Chef America culinary competition. He will participate in the show airing Feb. 24 at 8 p.m. Rathbun has cooked on several occasions at the James Beard House in New York and has been featured in numerous national magazines including Esquire, Better Homes and Gardens, Elle and Bon Appetit. Jasper's Restaurant, located at 9595 Six Pines Drive in The Woodlands, has been rated as one of Esquire magazine's Top 20 Best New Restaurants in America. The menu features Rathbun's "home cooking" style with items like prime steaks, rotisserie chicken, fish, salads and pizza. .
School fights to save art program
The half position was the school's music teacher. "Everyone was happy. Everyone loved her," Deborah Bright, grant manager for Project CREATES, said of Leslie Alden, the school's former art teacher. "She filled the school with the most incredible art." When her position was cut, parents decided to do something. "That was the catalyst to our parents coming together," Bright said. Since 2000, Project CREATES, a nonprofit, has worked with seven schools in Tulsa to bring arts education into classrooms. "We provide community artists to work with our teachers," Bright said. The goal of Project CREATES is to bring the arts, both visual and performing, into everyday lessons to encourage and facilitate student learning.

Mobile phones long ago began conquering parts of the world that are far away from the nearest electrical substation. But the rising price of oil is exposing a problem with these networks. In the far reaches of places like India or Africa, where companies such as Ericsson (ERIC) or Nokia Siemens Networks, a joint venture of Nokia (NOK) and Siemens (SI), are installing new cellular base stations at a furious pace, the facilities almost always get their power from diesel-powered generators. But fuel can account for as much as two-thirds of base-station operating costs. Add to that the expense of trucking diesel over poor roads to far-flung locations and protecting the valuable fuel against theft. "Getting oil or diesel to these stations is tremendously difficult," says Mats Granryd, president of Ericsson India.

Black History Month Community Events
The Burlington Jazz Band is celebrating Black History Month with sister city Moss Point after Burlington wanted to partner with a city affected by Katrina. The celebration also includes local jazz artists Leah Rollins and Charles Fairley. On Thursday, February 7, a special program, "My Soul Is A Witness," will be held at the Ina Thompson Moss Point Library at 12 Noon. The program will include local seniors sharing stories to East Park Elementary students of eyewitness accounts of events that shaped them and what life was like when they were young. The East Park student choir will also perform. The high point of February's month-long celebration will be "Nobody Told Me That The Road Would Be Easy." The special program will commemorate Black achievement on Saturday, February 9, at 6 p.m.

Primary election has 3 ballot types
The office is open weekdays from 8 to 4:30 for voting on either paper ballots or the electronic voting machines. The office also will be open for absentee voting on March 1 from 8 to noon. Kneuss reminded voters to take identification to the polls. A current photo ID such as a drivers license or state ID card or a copy of a government document that shows the voters current address is required.
