Dueling buttered corn tips and recipes

Hayley Swinney with Gypsy Rows Co. farm serves hot buttered corn at area farmers markets when it's in season. Here's her method:

"I use two pots, one at boiling and one just under boiling. The second pot is just to hold it and keep it warm until it's time to eat. If the corn is chewy or gross to begin with, salting or sugaring the water won't change that.

Boil the corn for two to six minutes; three is perfect. You don't want to cook it, necessarily, just heat it up. They'll float normally, sink when they're overdone. Yellows should brighten when it's just right; whites gets shiny; both look dull when overcooked. Salt, spice and butter to taste."

Annual Naples Winter Wine Festival uncorked

Southwest Floridas richest residents are used to fine dining. But some of them werent quite prepared for how much great food, wine and ambiance $7,500 could buy Friday night.

George Piper walked down the entry hall of Penny and Lee Andersons $25 million mansion/castle, and he was already amazed. And that was before he sampled the food by world-famous Los Angeles chef Michael Cimarusti of Providence restaurant.

The Naples man motioned to the doorway, past the elegant hall lined with columns, 18th-Century oil paintings and gilded silk chairs. I got from that door to here, he said, and Im blown away already.

Thats the whole point, of course.

Its all part of the annual Naples Winter Wine Festival. The $7,500-per-couple ticket also includes entry to todays charity auction.


Unionist ‘summit’ in bid to thwart SNP

Leading politicians from Holyrood and Westminster will gather behind closed doors in London today for their first meeting to discuss the prospect of giving the Scottish Parliament more powers.

Wendy Alexander, Annabel Goldie and Nicol Stephen, the respective leaders of the Labour, Conservative and Liberal Democrat parties at Holyrood, will privately meet their London counterparts in a room at the House of Commons to discuss how the proposed constitutional commission on devolution should be established and to underpin Unionist opposition to the independence policy of the Nationalists.

Last night, a source close to Des Browne, the Scottish Secretary, told The Herald: "It's critical at the moment for the Unionist parties to work together to demonstrate the fact that the settled will of the Scottish people is for devolution.


Scandinavian cooking to warm a winter home

Ask the average American about Scandinavian cuisine and they may mention lutefisk—if they mention anything at all. Luckily, a beautiful new reprint of "Kitchen of Light: New Scandinavian Cooking" (Artisan, $24.95) is on bookstore shelves now, painting a delicious picture of food from the north.

Author Andreas Viestad also hosts the PBS program "New Scandinavian Cooking With Andreas Viestad," and he used his deep knowledge of cooking to pack the volume with many amazing recipes. Even better, he often focuses on ingredients not as common in American kitchens.

To supplement a couple of chicken recipes, he has other dishes that highlight squab and grouse. And for every beef dish, there are scrumptious recipes calling for goat, lamb and venison. And of course, there are plenty of meals centered on the fruit of the sea.

Room No. 12 is featured in a 1981 film, "The Four Seasons," starring Carol Burnett and Alan Alda. When Mick Jagger stayed at Keswick Hall, he dined on spinach and goat cheese whipped potatoes with Chesapeake Bay rockfish. Wonder if he remembers it? Every evening, guests are treated to a bedside snack prepared by the pastry chef.


Lightening the power load with daylight saving

SOUTH Africans are starting the year with the uncomfortable realisation that we will live in a power constrained country for the foreseeable future. Until new generating capacity is up and running in the medium term, we need short-term solutions. One of the policy options on the table is the introduction of daylight saving time. This refers to the practice of setting clocks forward (usually by an hour) in spring, and then setting them back again in autumn. This means everyone gets up an hour “earlier” in summer to make use of early morning sunlight, and then gains an additional hour of daylight after work.

Daylight saving could bring several benefits to SA. More daylight for commuters would reduce f road accidents.
